Sunday Lunch

Post by Mud Dog »

Simple and tasty! A chicken stuffed with fresh rosemary, spiced with "Chicken Spice", black pepper and a little cayenne pepper if you like it with a bite, in a baking tray with a bit of olive oil and just a tiny amount of water (50ml should do it). Surrounded with quartered potatoes (salted) and onion chunks at the bottom, topped with cut carrots, then celery, chopped red and yellow peppers and button mushrooms. Cover with foil and stick it in the kettle braai (Weber) for 3 hrs. Remove the rosemary before serving. The juices can be drained and thickened in a saucepan by whisking in some flour while on the heat.

Looks good enough to eat before it's even cooked!

When your road comes to an end ...... you need a HILUX!.

Life is like a jar of Jalapeño peppers ... what you do today, might burn your ass tomorrow.
Don't take life too seriously ..... no-one gets out alive.
It's not about waiting for storms to pass. It's about learning to dance in the rain.
And be yourself ..... everyone else is taken!
