I've made a couple of batches of my own biltong.
Still playing around with the spices to get the taste just the way i like it. Last batch had a bit of the kick as i went bit overboard with the peri-peri :mocking: Not too bad though.

now ussually biltong does not last too long in my house. but i was just wondering how long is too long.
the last batch i had had some moist pieces at the thicker part of the cut - other bone dry. i try to get same width but with topside and silverside as my meat of choice, the rounded shape means it's not always perfect.

now i've read that the dry pieces OK to store at room temp. But the moist pieces needs to be in fridge / freezer vacuum packed. All other stories about in newspaper in fridge, not in sealed container, drying out more in fridge etc.
I store all my biltong in small brown paper bags at room temp. ussually only last 7 - 10 days. Not had a problem with it going bad before. but i do think it dries out more in the brown paper bag at room temp as well.

So the brown paper bag OK at room temp OK for that period from a hygiene point of view?

Put it in a plastic bag in the freezer; last for months. I found that wet biltong still goes off in the fridge if left in a plastic bag.

If you want to "batch" it, hang the biltong 'til half dry & then freeze. Then remove from freezer & hang again to dry in batches as required.

why do want to store just make as required. That said I have not had any problems with plastic container and storing it in the freezer.

I gooi mine in a ziplock bag in the freezer, and the rest in a brown paper bag at room temp for a couple of days. If it does get some mold, brush some plain brown grape vinegar on the mold - problem solved

Indeed Cassie.. I only make about 3 kg meat at time.. comes to about 1.5kg bltong or 2 - 3 small brown paper bags.
never had any issues with mould, since it only lasts for about a week. Will keep in mind the vinegar tip, thanks James

Ek gooi aan die begin, eers verdunde asyn en dan die speserye na smaak laat oornag staan en hang dan op vir droog word. Asyn gee dit baie lekker smaak en keer vir die muf. Bêre dit dan in plastieksakkies in die vrieskas. Het nog nooit probleme gehad nie. Ons maak ons eie asyn wat baie sterk is maar, winkelasyn kan jy omtrent 50% water en 50% asyn gebruik. Sprinkel dit oor die biltong dat dit goed klam is en dan die spice. Soos ek gesê het laat dan oornag staan.

Me also put in plastic bag in fridge, lasts very long.

When you make your biltong. have you tried hanging them behind your fridge to dry, you will be amazed how quick they dry. I hook mine onto them cooling fins at the back of the fridge.

Another tip, next time you take a bit of dry wors out of the fridge, heat it for 8 seconds or so in the microwave so that fat start to melt. It becomes as sweet as a sweet, very addictive.
