Synthetic rope is definitely the way to go. Stronger than a steel cable and easier to use.
Also allows you to keep it wrapped up on bullbar and ready for use when off road. Can also be "spliced " IF it breaks.
Just need to check which size will fit your winch , 10mm or 12mm diameter.
