We make up a custom bracket that slips in under the fender and "hangs" done only using the inner fender as a base support. the load is taken up on the upper body rail that the fender bolts onto.

That battery will fit bit it will eventually crack the inner fender with that bracket. You need a custom bracket that takes the load off the inner fender. I have a pic but will post it later

For the amount of work you envision it is sometimes cheaper to look for a clean rust free-ish to start off with. As for the fibreglass body: I have rebuilt a Suzuki SJ410 with one of those bodies and it was awful (to put it nicely). The fit of the doors was the worst issue! Goodluck with your build!
