2.2 carburetor engine hard starting
My 1991 double cab runs very well and starts without a problem, but when not used for about two days it takes a long time of cranking to start.

Happens to many old carb engines. While standing the fuel in the float chamber evaporates. Next time you want to start it, the mechanical fuel pump must first fill the float chamber before it will start.
A way around this is to convert to an electrical fuel pump. SO you can switch the car on, let the pump fill the float chamber and only then swing the engine.

A common problem. You can verify that it's the case by 'priming' the carb before starting the next time it has stood for a few days. Just take a soda bottle cap full of fuel and dump it down the carb before cranking the motor. If it fires up immediately (even if it stalls again after a few seconds), then that is the problem.
As Pieter said, connecting an electrical pump instead of using the old mechanical one, sorts the problem (don't remove the old one unless you have a blank cover plate).
