Picked my mealies to late - to hard to eat.

So I boiled them well in a pressure cooker, still hard so a striped them off the cob and minced them.

Anyone got a mealie bread recipe for this?

Harold, try using an ordinary bread or beer bread recipe and just add two cups of the minced mielies. Increase the salt with a pinch and the sugar by a tablespoon. Add a bit of the liquid used, beer, water, milk or buttermilk to get a consistant texture to the original mixture. Let us know how it comes out. I don, t have a recipe offhand, but that is how I would go about it. Do a test run before making it for a housfull of invited guests. Good luck.
